Spicy Maple Basting Sauce For Grilled Lake Trout

Ingredients:

     1/4  cup           maple syrup
     1/2  cup           water
   1      tablespoon    vinegar -- white or raspberry
   1      inch          ginger root -- peeled
                        - and minced
   1      centiliter    garlic -- minced
     1/2  teaspoon      dried hot red pepper flakes
   1      pinch         salt
 

Preparation:

Combine all the ingredients in a small heavy saucepan and simmer until reduced to about 1/2 cup. Cool and pour over the fish as a marinade for 20-40 minutes. Turn the fish once to ensure both sides soak in the flavor. Drain and reserve for brushing on during grilling.
