Spicy Mango Salsa

Ingredients:

     1/2  cup           coarsely-chopped mango
   2      tablespoons   finely-diced red onion
   1      teaspoon      finely-diced jalapeno pepper
   2      tablespoons   fresh lime juice
                        chopped fresh cilantro -- to taste
                        salt -- to taste
                        freshly-ground black pepper -- to taste
 

Preparation:

Combine the mango, onion, jalapeno, cilantro and lime juice. Season to taste with salt and pepper. Cover and set aside. May be prepared up to 1 day in advance, covered and refrigerated. Bring to room temperature before serving.
