Porterhouse Steak With Hoisin Grill Sauce

   2 1/2  pounds        porterhouse steak -- (1 steak)
                        grilled scallions
                        cast iron potato salad -- see * note
                        ***sauce***
   6      tablespoons   hoisin sauce
   2      tablespoons   rice wine vinegar
   2      tablespoons   soy sauce
   2      tablespoons   unsalted butter
     1/2  medium        red onion -- finely diced
   1                    garlic clove -- minced
   6                    plum tomatoes -- coarsely diced
     1/4  cup           ketchup
   2      tablespoons   Dijon mustard
   2      tablespoons   dark brown sugar
   1      tablespoon    honey
   1      teaspoon      cayenne
   1      tablespoon    ancho chile powder
   1      teaspoon      pasilla chile powder
   1      tablespoon    Worcestershire sauce
                        salt -- to taste
                        freshly-ground black pepper -- to taste
 

Preparation:

* Note: See the "Cast Iron Potato Salad" recipe which is included in this collection. Season the steak with salt and pepper. Combine all sauce ingredients. Grill the porterhouse for 5 minutes on each side while basting with the sauce. Serve with grilled scallions and Cast Iron Potato Salad.
