Swiss Sauerkraut Casserole

Ingredients:

8         ounces        uncooked egg noodles
1 1/2     pounds        ground beef
1         small         onion, chopped
1/2       teaspoon      salt
1/2       teaspoon      pepper
32        ounces        sauerkraut, undrained
21 1/2    ounces        condensed cream of chicken soup
8         ounces        shredded Swiss cheese
                        Chopped red onion, if desired
 

Preparation:

Heat oven to 350 degrees. Cook and drain noodles as directed on package. While noodles are cooking, cook beef, onion, salt and pepper in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Mix noodles, beef mixture, sauerkraut, soup and 1 cup of the cheese in ungreased 3-quart casserole. Bake uncovered 45 minutes. Sprinkle with remaining 1 cup cheese. Bake uncovered 5 to 10 minutes or until cheese is melted. Sprinkle with red onion.
