Ingredients:

     1/2  kilogram      cauliflower -- cut into medium
                        -- sized flowerettes
   3      big           potatoes -- cubed
   3                    tomatoes -- finely chopped
   1                    onion finely chopped
   1      1 inch piece  ginger
   1      teaspoon      red chilli powder
   1      teaspoon      haldi
   1      teaspoon      garam masala
                        salt to taste
   2      tablespoons   ghee
                        sliced green chillies and chopped
                        -- coriander leaves
                        -- for garnishing
 

Preparation:

Heat ghee in a kadai and fry the onion till light brown. Add cauliflower and potatoes and fry for 5 minutes. Add tomatoes and all masalas and salt to taste. Cover and cook on a slow fire till vegetables are done. Garnish and serve hot.
