Ingredients:

   4      medium        tomatoes
     1/2  bunch         cilantro leaves and stems
   3      tablespoons   vegetable oil
   2      whole         dried red chili
   2                    garlic cloves -- peeled and crushed
     1/2  teaspoon      black mustard seeds
     1/2  teaspoon      cumin seeds
   1      1 inch piece  fresh ginger root -- peeled and grated
   1      small         fresh hot green chili -- split and seeded
   1 1/4  teaspoons     salt
     1/2  teaspoon      cayenne
   1      pinch         turmeric
   4 1/2  cups          corn kernels
 

Preparation:

Process the tomatoes and cilantro in a food processor until coarsely chopped. Heat the oil in a saucepan, add the dried chili and fry for about 1 minute. Add the garlic, mustard seeds, and cumin seeds and fry for a minute longer. Add the tomato and cilantro mixture, then the ginger, green chili, salt, red pepper, and turmeric. Cook for 5 minutes, add the corn, and simmer for 5 to 7 minutes. Serve hot. serves 10
