Cashew Nut Curry

Ingredients:

   2      tablespoons   oil
   1                    medium-size onion -- diced
   1                    red chili -- seeded and minced
   1      teaspoon      turmeric
   1      teaspoon      coriander
     1/4  teaspoon      ground cardamom
   2      cloves        garlic -- minced
     1/2  teaspoon      minced gingerroot
   1                    cinnamon stick
     1/2  teaspoon      salt
   8      ounces        raw cashews -- (abouot 2 cups)
   2                    medium-size potatoes -- peeled and diced
   2      cups          coconut milk
 

Preparation:

Heat the oil in a medium saucepan over medium heat and add the onion, chili, turmeric, coriander, cardamom, garlic, gingerroot, and cinnamon stick. Cook for 2 minutes, stirring constantly. Add all of the remaining ingredients and bring to a boil. Lower the heat, and simmer, partially covered, for 20 minutes, or until the potatoes are tender and the sauce is thickened. Serve with rice. serves 4
