Ingredients:

     1/4           cup  pan drippings
     1/4           cup  all-purpose flour
  2 1/2           cups  milk    (2 1/2 to 3)
     1/2      teaspoon  salt
     1/8      teaspoon  pepper  (1/8 to 1/4)
 

Preparation:

Pour off all except 1/4 cup drippings from skillet in which chicken was fried; place skillet over medium heat. Whisk in flour, and cook 1 minute, whisking constantly. Gradually add milk; cook, whisking constantly, until thickened and bubbly. Stir in salt and pepper. Serve hot.
