Aloo Gobi (potatoes With Cauliflower)

Ingredients:

   2      large         potatoes -- cut in 1" cubes
   1                    onion -- chopped
   4      cloves        garlic -- minced
  10      slices        fresh ginger -- minced
   1      teaspoon      canola oil
     1/4  cup           almonds -- chopped
   1      cup           tomato puree
     1/2  teaspoon      chili powder
   1      teaspoon      tumeric
   1      teaspoon      coriander
   1      teaspoon      sea salt
     1/2  teaspoon      pepper
   2      cups          cauliflower florets
   2      teaspoons     garam masala
   1      cup           water
 

Preparation:

Saute the onions, garlic, and ginger in skillet. Add the almonds and all the spices except the garam masala and saute about 3 minutes. Add the tomatoes, potatoes, and cauliflower with 1 cup water and simmer until the vegetables are tender and the sauce is thick, about 15-20 minutes. Add the garam masala and serve.
