Ingredients:

   4      ounces        yellow -- (or red) lentils,
                        -- soaked for 1 hour
   2      ounces        tomatoes -- diced
     1/4  ounce         shallots -- diced
     1/4  ounce         olive oil
     1/8  ounce         ginger -- chopped
     1/2  tablespoon    garam masala
     1/2  tablespoon    turmeric
     1/4  tablespoon    caraway seed
     3/4  pint          water
                        salt and pepper -- to taste
 

Preparation:

Heat oil, fry caraway seeds, garam masala, ginger and shallots Add lentils, turmeric and continue to fry for 1 to 2 minutes. Add water and cook for 15 to 20 minutes until lentils are just cooked. Add seasoning and diced tomatoes.
