Alu Bhaji (spicy Fried Potatoes)

Ingredients:

 500      gram          potatoes
   3      tablespoons   oil
   1      teaspoon      black mustard seeds
     1/2  teaspoon      ground turmeric
   1      large         onion -- finely sliced
   1                    fresh green chillies -- (to 2), deseeded and sliced
   1 1/2  teaspoons     salt
     1/4  cup           hot water
   1      tablespoon    lemon juice
 

Preparation:

Boil potatoes in their skins until just tender.Peel and dice.Heat the oil in a sauce pan and fry the mustard seeds until they pop. Add the turmeric,sliced onions and chillies and fry until onions are soft and golden. Add the salt and water, bring to a boil, add potatoes,cover and cook until liquid is absorbed. Remove from heat. Sprinkle with lemon juice and stir well. Serve HOT. Can be served with boiled rice or chapati.
