Ingredients:

  12      kilograms     cauliflower -- cut into flowerets
   3      large         potatoes -- cubed
   3                    tomatoes -- finely chopped
   1                    onion -- finely chopped
   1      piece         ginger -- (1 inch)
   1      teaspoon      red chilli powder
   1      teaspoon      haldi
   1      teaspoon      garam masala
                        salt -- to taste
   2      tablespoons   ghee
                        sliced green chillies -- for garnish
                        chopped coriander leaves -- for garnish
 

Preparation:

Heat ghee in a kadai and fry the onion till light brown. Add cauliflower and potatoes and fry for 5 minutes. Add tomatoes and all masalas and salt to taste. Cover and cook on a slow fire till vegetables are done. Garnish and serve hot.
