1. Steam sweet potatoes 20 minutes until just tender.
2. In a medium skillet, sauté onions in 3 tablespoons vegetable stock 2 to 3 minutes.
3. Add steamed sweet potatoes, chickpeas, tomatoes, curry paste, liquid and salt to sautéed onions. Bring to a boil; reduce heat, cover and simmer 7 minutes |
