Slow-Simmered Pork Roast

Ingredients:

   2 1/4  pounds        boneless pork butt
   3                    green onions -- slivered
   1      teaspoon      fresh ginger root -- julienne
   2      whole         star anise
   2      tablespoons   mein see -- see * note
   2      tablespoons   soy sauce -- light
   2      teaspoons     brown sugar
   1      cup           Chinese rice wine -- or dry sherry
   2                    garlic cloves -- sliced thin
     1/2  teaspoon      white pepper -- freshly-ground or
                        -- to taste
   2      cups          water -- more may be needed
 

Preparation:

* Note: Soybean condiment available in Asian markets. Mix together all the ingredients except the pork. Place the meat in an ovenproof casserole just large enough to hold it. A crockpot may be used. Pour the sauce over the top, cover the dish and bake at 275 degrees from 5 to 8 hours, depending on your taste.
