Ingredients:

   1 1/2  pounds        chicken -- 1 inch cubes
   1                    egg -- beaten
   1      cup           flour
   5      stalks        bok choy -- sliced
   1                    red -- green, and hot
                        -- pepper, in strips
     3/4  cup           water
   3      tablespoons   soy sauce
   3      tablespoons   white vinegar
   3      tablespoons   cornstarch
   3      tablespoons   sugar
   3      tablespoons   rice wine
   2      tablespoons   Chinese chili paste w/ garlic
   1      teaspoon      fresh ginger -- minced
   1      teaspoon      hoisin sauce
  12                    black peppercorns
   2      cloves        garlic -- minced
   1      tablespoon    oil for stir frying
                        oil for deep frying
     1/2  teaspoon      cayenne
 

Preparation:

Dip chicken in egg then in flour and deep-fry. In bowl, mix water, soy, cornstarch, vinegar, hoisin, rice wine, sugar, chili paste, peppercorns and cayenne. Heat 1 tbs oil in wok and stir fry garlic and ginger. In a few seconds, add peppers and bok choy. Fry 1 min, add sauce and meat. Stir until sauce thickens and coats. Serve on rice.
