Ingredients:

     1/4  pound         chicken breast -- skinless, boneless,
                        -- finely chopped
     1/4  pound         shrimp or white fish -- finely chopped
     1/2  stalk         celery -- finely chopped
                        **or**
   2      tablespoons   bean sprouts -- finely chopped
   1                    green onion -- finely chopped
   2      teaspoons     soy sauce
     1/4  teaspoon      salt
 

Preparation:

Mix all ingredients in a glass bowl and allow to marinate in refrigerator for at least 2 hours. Make dough using the Dim Sum Dumpling Dough (Boiling Water Method) recipe. Or buy dumpling or wan ton skins. Make circles or squares. Place about 1 teaspoon of filling in the center of each dumpling. Fold skin up into half-moons or triangles and seal edges with egg wash. If using the square wrappers, fold the edges to the center and hold in place with egg wash or water. This makes the dumplings look like flowers. Deep fry like won tons until golden brown. Serve hot with sweet and sour dipping sauce. Steam for 10-12 minutes.
