   1      cup           cooked -- (or canned) beets,
                        -- diced
     1/2  teaspoon      salt
     1/4  teaspoon      pepper
   1      tablespoon    lemon juice
   1      teaspoon      prepared mustard
   4      tablespoons   sour cream
 

Preparation:
