Beef Salad

Ingredients:

   1      cup           leftover beef -- thinly sliced
   6      medium        potatoes -- boiled and sliced
   4                    tomatoes -- peeled and sliced
   1      teaspoon      salt
     1/4  teaspoon      pepper
   2      tablespoons   wine vinegar
   4      tablespoons   vegetable oil
     1/2  teaspoon      dried tarragon leaves
   1      tablespoon    chopped parsley
   2                    hard-boiled eggs -- sliced
 

Preparation:

In salad bowl, combine beef, potatoes, and tomatoes. In mixing bowl, combine salt, pepper, vinegar, oil, and tarragon. Mix well. Pour over salad. Sprinkle with parsley. Decorate with egg slices. Recipe Source: THE ART OF FRENCH COOKING by Fernande Garvin
