Ingredients:

   8      ounces        plain low-fat yogurt -- strained
   1      medium        cucumber -- peeled and seeded
   2      teaspoons     white wine vinegar
   1      tablespoon    fresh dill -- chopped
   1      clove         garlic -- minced
   1      dash          white pepper
   1      dash          salt -- (optional)
 

Preparation:

Finely chop cucumber, place in colander and sprinkle with about a teaspoon of salt. Let sit for about 20 minutes to remove excess liquid. Rinse well and press between sheets of paper towel to blot up extra liquid. Straining the yogurt through a coffee filter will eliminate extra liquid. Let yogurt drain for about an hour or more. (If you're short of time, you can use yogurt straight from the carton.) Combine all ingredients in a small bowl
