Turkey Breast- Orange Blackberry Relish

   1      medium        size orange -- seeded and
                        coarsely chopped
     1/3  cup           + 2 T. frozen orange
                        juice concentrate thawed and
                        undiluted and divided
     1/4  cup           firmly packed brown sugar
   2      tablespoons   cornstarch
   1      package       frozen -- (16 oz.)
                        unsweetened blackberries
                        thawed and drained
     1/4  cup           water
   1                    turkey breast -- (6 lb.)
                        skinned
  12                    leaf lettuce leaves
   2      medium        size oranges cut
                        into 1/4 inch slices
   2 1/2  tablespoons   relish.
 

Preparation:

With knife blade in processor, add chopped orange. Process 1 1/2 minutes Or unti finely chopped. Place chopped orange in a medium non- aluminum saucepan. Add 2 t. orange juice concentrate, brown sugar, cornstarch and thawed blackberries; stirring gently. Place over medium-low heat and cook 7 minutes or until mixture thickens, stirring constantly. Place in a medium bowl; cover and chill. Combine remaining 1/3 c. orange juice concentrate and 1/4 c. water. Set aside. Place turkey breast on a rack covered with cooking spray and place rack in a shallow roasting pan. Insert meat thermometer into meaty portion, making sure it does not touch the bone. Baste turkey breast with orange juice mixture. Cover and bake at 325F for about 1 hour. Uncover and bake turkey breast an additional hour or until meat thermometer registers 170F, basting frequently with orange juice mixture. Place turkey breast on a lettuce lined serving platter; cover loosely with foil and let stand about 15 minutes before slicing. Arrange orange slices around turkey slices and serve relish with turkey.
