Pasta With Tomatoes And Black Beans

Ingredients:

   1      cup           green onions -- sliced 1/8" thick
  28      ounces        tomatoes -- canned, diced
  15      ounces        black beans -- drained
   1      can           artichoke hearts -- cut in quarters
   1      pound         pasta -- cooked as directed
   1      dash          salt
   1      dash          red pepper flakes
     3/4  teaspoon      oregano
                        freshly ground pepper
   2      teaspoons     olive oil
   2      cloves        garlic -- minced
 

Preparation:

Cook pasta as directed. Meanwhile, heat olive oil in the bottom of a medium saucepot. Add green onions and sauté‚for 5 minutes. Add seasonings and stir for 1 minute. Add tomatoes; cover and simmer for 10 minutes. Add black beans, combine and simmer for 5 minutes. Add artichoke hearts. Adjust seasonings and toss with pasta.
