Mushroom-Garlic Pasta Dough

Ingredients:

   1      tablespoon    oil
     1/4  cup           water
     1/2  teaspoon      salt
  14 1/2  teaspoons     black pepper -- (freshly grnd., if
                        -- possible)
   1      tablespoon    minced garlic -- (more if you like
                        -- garlic)
   5      medium        sized mushrooms
   2      cups          flour -- (regular, everyday,
                        -- bleached or unbl
 

Preparation:

Put flour in mixing bin of pasta machine. Puree first 7 ingredients. Add to flour in mixing bin. Thoroughly blend. If the dough is too sticky, add more flour, a little at a time; if the dough is too dry, add more water, a little at a time, until the dough is the correct consistency to be extruded. This takes practice and learning what your machine can handle and what *you* can handle (separating strands of noodles!). Extrude.
