Italian Tomato Sauce - 1

Ingredients:

   3      tablespoons   olive oil
  13      ounces        canned tomatoes -- chopped
   2      cups          chopped onions
   6      ounces        tomato paste
   1      medium        bell pepper -- diced
   1      tablespoon    honey
   2      teaspoons     basil
                        black pepper -- lots
   1      teaspoon      oregano
   6                    garlic cloves -- minced
   1      teaspoon      thyme
                        parsley
   1 1/2  teaspoons     salt
 

Preparation:

Heat olive oil in a Dutch oven. Add onion, bell pepper, herbs and salt. Sauté‚over medium heat until the onion is fairly soft, 8 to 10 minutes. Add tomatoes, tomato paste, honey and black pepper. Bring to a boil. Lower heat and simmer, partially covered, for 20 to 30 minutes. Add garlic and cook 10 minutes more. Either let the sauce sit for a couple of hours or serve now. Serve over spaghetti and with homemade garlic bread.
