Chicken Czardas

Ingredients:

   3                    boneless skinless chicken breasts -- in strips
   1      tablespoon    diet margarine
   1 1/2  teaspoons     salt
   1                    onion -- chopped
     1/2  pound         mushrooms -- sliced
     1/4  cup           sherry -- or dry white wine
   2      teaspoons     arrowroot powder -- or cornstarch
   2      teaspoons     water
   1      cup           plain lowfat yogurt
   1 1/2  teaspoons     paprika
                        noodles
 

Preparation:

Melt diet margarine in nonstick skillet over Medium heat. Add chicken and season with salt. Cook, stirring constantly fopr 3 minutes. Add onion and mushrooms. Continue stirring for 2 minutes longer. Add sherry or white wine. Blend arrowroot and water in a cup. Add to skillet. Cook and stir rapidly until thick. Stir in yogurt and paprika. Cook just to heat. Do not boil. Serve with noodles and vegetables.
