Bulgur Pilaf

Ingredients:

                        vegetable cooking spray
   1      cup           chopped onion
   1      cup           coarsely shredded carrot
   1      cup           bulgur -- (cracked wheat)
                        uncooked
  10      tablespoons   bulgur -- (cracked wheat)
                        uncooked
     1/2  cup           currants
     1/2  teaspoon      salt
   2      cups          water
   2      tablespoons   pine nuts -- toasted
 

Preparation:

Coat a medium saucepan with cooking spray; place over medium heat until hot. Add onion and carrot; sauté‚5 minutes or until tender. Add bulgur, currants, and salt; stir well. Add water; bring to a boil. Cover, reduce heat and simmer 10 minutes or until bulgur is tender and liquid is absorbed. Yield: 5 servings (serving size: 1 cup).
