Greek Style Lamb Shanks (Convection Oven)

Ingredients:

  4                     lamb shanks -- cracked
                        salt and pepper
  1              Large  onion -- thinly sliced
  1             Medium  green pepper -- seeded and cut into
                        strips
  1                Can  tomato sauce -- (8 oz.)
  1              Clove  garlic -- minced
     1/3           cup  dry white wine or chicken broth
     1/2      teaspoon  each: salt and oregano
     1/4      teaspoon  each: sugar -- cinnamon and
                        rosemary
  1           teaspoon  grated lemon
  1         tablespoon  chopped parsley
                        crumbled Feta cheese
 

Preparation:

Sprinkle lamb with salt and pepper. Arrange in a 4 to 5-quart Dutch oven (or casserole). Scatter onion and green pepper over top. Stir together tomato sauce, garlic, wine, salt, oregano, sugar, cinnamon and rosemary. Pour over meat. Cover and bake at 350 degrees for 2 1/2 hours. Remove to platter; skim off fat from liquid. Pour liquid over lamb. Garnish with lemon peel and parsley; sprinkle with Feta cheese if desired.
