Ingredients:

   6      tablespoons   butter or margarine
   2      tablespoons   flour
   3      cups          cooked lobster meat
     1/8  teaspoon      nutmeg
          dash          paprika
   1      teaspoon      salt
   3      tablespoons   sherry
   3      egg           yolks
   2      cups          milk or light cream
                        toast slices
 

Preparation:

In double boiler top, melt butter; stir in flour, lobster, nutmeg, paprika, salt, sherry. Beat yolks slightly; add cream or milk; mix well. Slowly stir yolks into lobster; cook over hot water, stirring, until just thickened. This recipe is equally good with crab, shrimp or scallops, or a mixture.
