Merrymount Lobster Or Seafood

Ingredients:

   3      cups          lobster -- crab, shrimp, or
                        sea legs -- cut up
   1      tablespoon    lemon juice
   2                    eggs -- slightly beaten
   2      cups          light cream
   2      tablespoons   butter
   1      cup           soft bread crumbs
   1      cup           buttered cracker crumbs --
                        saltines may be used
   1      teaspoon      prepared mustard
   1      dash          cayenne pepper
     1/4  teaspoon      freshly ground black pepper
                        salt -- to taste
 

Preparation:

Lobster may be frozen, canned, or fresh. Place chunked lobster into a buttered casserole dish. Sprinkle lemon juice and beaten eggs over lobster. In a saucepan, bring cream, butter, and bread crumbs just to a boil; stir well together and pour over lobster. Stir mustard, cayenne pepper, black pepper, and salt carefully into lobster mixture. Top casserole with 1 cup buttered cracker crumbs. Bake, uncovered, in a preheated oven at 350F until crumbs are brown and lobster is bubbly - no more. Note: Excellent with crab also.
