Ingredients:

  Amount  Measure       Ingredient -- Preparation Method

   2      quarts        water
   6                    celery stalks -- cut into
          2 inch piece  
   2      medium        onions -- peeled and
                        -- quartered
   2                    garlic cloves
     1/2                lemon
                        fresh shrimp heads -- and/or
                        shells -- lobster heads, and
                        OR shells -- fresh fish bones
                        use ingredients singly or in
                        combination
 

Preparation:

Combine all ingredients in large sauce pan or stockpot and bring to rapid boil. Reduce heat to low and simmer slowly 2 to 8 hours depending on strength of flavor desired. Strain before using.
