Pasta with Mussels

Ingredients:

   3      tablespoons   butter
   3      tablespoons   olive oil
  20      milliliters   chopped garlic
   6      ounces        canned or frozen mussels
   1      small         green pepper -- diced
     1/2  cup           red wine
   1      28 ounces ca  Italian tomatoes -- crush
                        hand
     1/4  cup           chopped fresh parsley
                        cheese for topping
 

Preparation:

Melt butter in olive oil. Sauté garlic and pepper for 2-3 minutes. Add tomatoes and wine and simmer for 30 minutes Add mussels and cook on low heat for 15 minutes. Mix in fresh parsley and turn off heat. Let sit for 10 minutes. Season w/salt and pepper to taste. Serve over hot pasta.
