Pasta With Mussels

Ingredients:

   3      tablespoons   butter
   3      tablespoons   olive oil
   2      cloves        garlic chopped
   4      ounces        canned or frozen -- mussels, up to 6
   1      small         green pepper diced
     1/2  cup           red wine
   1      28 ounces ca  Italian tomatoes -- (crushed by hand)
     1/4  cup           chopped fresh parsley
                        cheese for topping -- (opt.)
 

Preparation:

Melt butter in olive oil. Sauté garlic and pepper for 2-3 minutes. Add tomatoes and wine and simmer for 30 minutes. Add mussels and cook on low heat for 15 minutes. Mix in fresh parsley and turn off heat. Let sit for 10 minutes Season with salt and pepper to taste. Serve over hot pasta.
