Ingredients:

   1                    onion, chopped -- med
   2      tablespoons   margarine
   1                    green pepper -- chopped
   1                    celery stalk -- chopped
   1                    bay leaf
   1      tablespoon    parsley
   1      teaspoon      Cajun seasoning*
   1      teaspoon      salt
     1/8  teaspoon      cayenne pepper
   6      ounces        tomato paste
   2      cups          water
     1/4  cup           triple sec
   2      cups          shrimp -- not cooked
 

Preparation:

* [Editor] See "Cajun" recipe collection for many Cajun seasonings. Or use Paul Prudhomme's "Seafood Magic" Cajun Seasoning. Melt margarine, add onion, green pepper and celery. Sauté until tender. Stir in remaining ingredients, except shrimp. Cook over low heat for 20 minutes. Add shrimp and cook for an additional 10 minutes. Serve over rice
