Spicy Lamb And Vegetable Kebabs

Ingredients:

  1                cup  plain nonfat yogurt
  1         tablespoon  fresh lime juice
  1 1/2      teaspoons  ground cumin
  2                     garlic cloves -- minced
     1/4      teaspoon  cayenne pepper
  1 1/2         pounds  lamb leg meat -- cut into 16 large
                        cubes
  3                     yellow squash cut into 12 1/2-inch thick
  1                     red bell pepper -- cut into 12 squares
  1                     red onion -- cut into 12 wedges
  2        tablespoons  pure olive oil
 

Preparation:

Combine yogurt, lime juice, cumin, garlic and cayenne in large bowl. Add lamb and toss to coat. Cover and refrigerate 1 hour. Prepare barbecue (medium-high heat). Alternate 4 lamb cubes, 3 squash pieces, 3 red pepper squares and 3 onion wedges on each of 4 metal skewers. Brush meat and vegetables with oil. Grill until meat is cooked to desired doneness, turning occasionally, about 10 minutes for medium rare. Transfer to platter and serve. Serve this with pasta salad or couscous for a great outdoor dinner.
