Crab Filo Appetizers

Ingredients:

   3      tablespoons   butter
   2      cloves        garlic -- minced
   3      tablespoons   flour
   1      cup           whipping cream
   1      pound         fresh crab meat
   2      tablespoons   chopped chives
   2      tablespoons   chopped parsley
                        salt and pepper to taste
   8                    filo sheets
     1/2  cup           unsalted butter
 

Preparation:

In 3 Tbs butter, sauté garlic, and then stir in the flour and cook for about 1 minute. Add the cream and stir until thick. Stir in crab, chives, salt and pepper. Fold the filo sheets so they are 6" x 6" brushing each layer with melted butter. Put a big plop of the crab mixture in the center of each square, and fold into triangles. Seal and brush top with melted butter. Bake at 400F for 15 to 20 minutes, until they look perfectly browned.
