Halibut With Dried-Pineapple Salsa

Ingredients:

     1/2  cup           diced dried pineapple
     1/2  cup           diced red bell pepper
     1/4  cup           chopped fresh cilantro
   2      teaspoons     minced jalapeno pepper
     1/8  teaspoon      salt
     1/4  cup           fresh lime juice
   1      teaspoon      vegetable oil
   4                    halibut steaks -- (4-ounce)
                        (1 inch thick)
   1      teaspoon      vegetable oil
     1/8  teaspoon      salt
                        vegetable cooking spray
                        lime wedges -- (optional)
 

Preparation:

Combine first 7 ingredients in a bowl, and stir well. Let stand at least 15 minutes, stirring occasionally. Brush fish with 1 teaspoon oil, and sprinkle with 1/8 teaspoon salt. Set aside. Prepare grill. Place fish on grill rack coated with cooking spray, and cook 5 minutes on each side or until fish flakes easily with a fork. Yield: 4 servings (serving size: 3 ounces fish and 1/4 cup salsa).
