Black Beans With Rice

Ingredients:

   1 1/2  Cups          black beans
   4      Slices        bacon -- chopped & fried
     1/2  Clove         garlic -- crushed
   1                    onion -- finely chopped
   1      Teaspoon      chili powder
          Dash          salt
          Dash          cayenne pepper
                        meat stock or broth
   2      Cups          rice -- cooked
 

Preparation:

1. Soak beans overnight. Boil beans until tender. Drain.

2. Add bacon, garlic, and onions. Season with chili powder, salt and cayenne pepper to taste. Add enough meat stock to cover beans and simmer slowly until the beans fall apart a little and make a thick rich sauce.

3. Pour over mounds of warm cooked rice.
