Ingredients:

     1/2  cup           basil-garlic sauce -- * see note
   3      tablespoons   lemon juice
   1                    carrot -- chopped
   1                    leek -- chopped
   2      tablespoons   firm butter
   2      pounds        rockfish or red snapper -- drawn
 

Preparation:

* Note: See the "Basil-Garlic Sauce" recipe which is included in this collection. Heat oven to 375F Mix Basil-Garlic Sauce, lemon juice, carrot, and leek. Cut butter into small pieces. Place in rectangular baking dish, 13- by 9- by 2-inches. Place rockfish on butter. Spread vegetable mixture over fish. Cover and bake 40 minutes or until fish flakes easily with fork.
