Clam Chowder - 1

Ingredients:

   1      cup           chopped onion
   1      cup           chopped celery
   2      cups          chopped potatoes
   2      cans          minced clams
   1      tablespoon    apple cider vinegar
     3/4  cup           butter/margarine
     3/4  cup           flour
   1      quart         half and half
                        salt and pepper
 

Preparation:

Pour clam juice and vinegar over vegetables, add water just to cover. Simmer 30 minutes. Melt butter, blend in flour, cook 1 minute, then add half and half. Cook until smooth and thick. Add 1/2 teaspoon salt and pepper to taste/ Last add vegetables and clams, cook in crock pot at least 1 hour until flavor is through.
