Grilled Butterflied Leg Of Lamb

Ingredients:

   4 3/8  pounds        leg of lamb -- butterflied
   1 1/8  teaspoons     salt
   2                    garlic cloves -- chopped
   1 1/8  cups          olive oil
   2                    lemons -- juiced
     1/3  cup           tomato paste
   2 1/8  teaspoons     rosemary
     1/2  teaspoon      black pepper -- ground coarse
     1/2  teaspoon      marjoram
     1/2  teaspoon      oregano
     1/2  teaspoon      savory
 

Preparation:

1. Have the butcher butterfly the leg of lamb, or do it yourself. 2. Combine all remaining ingredients in a glass, enamel, stainless, or pla 3. Add the lamb, turning it to make sure it is coated on all sides. Marina 4. Grill outside, or broil inside at 20 cm from the flame for 15 minutes o 5. Serve sliced thin (hot) with the rest of the marinade, heated. This also makes wonderful sandwiches if there are any leftovers
