Lemongrass Tangerine Tuna

Ingredients:

     1/2           cup  chicken broth -- low-fat low-sodium
  2        tablespoons  lite soy sauce
  2        tablespoons  sesame oil
     1/4           cup  tangerine juice -- or substitute
                        -- orange juice
  1         tablespoon  minced fresh lemongrass
  1           teaspoon  crushed red pepper
  1 1/2         pounds  fresh tuna steaks
 

Preparation:

Combine the broth, soy sauce, oil, juice, lemongrass, and pepper in a shallow pan. Add the tuna and marinate 30 minutes to 2 hours. Broil or grill the tuna on each side for about 4 to 5 minutes and serve.
