Sonoma Tuna Roll-Ups

Ingredients:

     3/4           cup  sonoma dried tomato halves -- snipped into
     1/2          inch  pie
  12 1/4        ounces  chunk-light tuna in water -- (2 6 1/8 oz. cans)
                        drained
  6        tablespoons  low calorie mayonnaise
     1/3           cup  celery -- diced
     1/4           cup  red onion -- minced
     1/4           cup  parsley -- chopped
  1         tablespoon  mustard -- yellow
  4                     flour tortilla -- 8-inch
                        lettuce leaves -- green leaf
 

Preparation:

1. Place tomatoes in medium bowl; cover with boiling water and set aside 10 minutes. 2. Drain tomatoes and return to bowl. Add remaining ingredients except tortillas and lettuce; mix well. 3. For each sandwich, spread 1/2 cup tuna mixture onto 1 side of 1 tortilla; cover with lettuce. Roll up, jellyroll-fashion. Repeat with remaining tortillas, tuna and lettuce. 4. Serve immediately or individually wrap in plastic wrap and refrigerate up to 12 hours.
