Bon Appetit Vegetarian Chili With Chipotle Chilies

Ingredients:

   1      cup           chopped carrots
   1      cup           chopped red or green bell -- pepper
   1      cup           chopped onion
   3      large         garlic cloves -- minced
   1      tablespoon    chili powder
   2      teaspoons     ground cumin
   1      28 oz can     Italian plum -- tomatoes with
                        -- juice,
   1      15 oz can     red kidney beans -- drained
   1      15 oz can     cannellini -- beans, drained
   1      15 oz can     black beans -- drained
   2      tablespoons   canned chopped chipotle -- chilies
                        -- in adobo sauce
 

Preparation:

You guys can figure out the rest. Cook for 30 minutes, stirring, and add salt and pepper. I omitted 1 tbs oil at the beginning of this recipe- it was used to sauté the vegetables.
