Black-Eyed Pea Salad

Ingredients:

   2      pounds        cooked black-eyed peas
   2                    scallions
                        --cut into 1/2-inch pieces
   1                    red bell pepper
                        --seeded and finely diced
     1/2                green bell pepper
                        --seeded and finely diced
   1      tablespoon    minced garlic
     1/4  cup           chopped cilantro
     1/2  cup           olive oil
   3      tablespoons   red wine vinegar
   1      tablespoon    whole grain mustard -- (up to 2)
   1                    fresh jalapeno -- minced
                        salt and freshly ground black pepper -- to taste
 

Preparation:

In a large bowl, combine the peas, scallions, bell peppers, garlic and cilantro. In a small bowl, whisk together the remaining ingredients. Pour over the salad mixture and combine well. Serve.
