Black Bean Casserole

Ingredients:

   1      stick         butter or margarine
   2      large         onions -- chopped fine
   1      large         bell pepper -- chopped fine
   2      cloves        garlic -- minced
   1      can           rotel tomatoes -- diced
   1      teaspoon      cumin
   2      16 oz cans    black beans -- not drained
  12                    corn tortillas -- cut into quarters
   2      cups          Monterey Jack cheese -- grated
   2      cups          lettuce -- shredded
   2                    tomatoes -- diced
   1      bunch         green onions -- chopped fine
   1      small   can   black olives -- chopped
   1      cup           sour cream
   1      pinch         red chili powder to taste
 

Preparation:

Sauté onions, bell pepper, and garlic in butter. Add tomatoes, cumin, chili powder and beans. Simmer for 10 minutes. In a 9x13 oiled casserole dish layer first beans, then tortillas, cheese. Repeat. Bake at 350F. for 20-35 minutes. Remove from oven and let set 5 to 10 minutes to set. Cut and serve. Garnish with tomatoes, lettuce, green onions, black olives, and sour cream.
