Blackberry Muffins

Ingredients:

     1/2  cup           butter -- room temperature
   1 1/4  cups          sugar
   2      large         eggs -- room temperature
   2      cups          flour, all-purpose
   2      teaspoons     baking powder
     1/2  teaspoon      salt
     1/2  cup           milk
   2      cups          blackberries -- fresh or frozen
   4      teaspoons     sugar
 

Preparation:

Preheat oven to 375 degrees. Grease 18 1/2 cup muffin cups. Using electric mixer, cream 1/2 cup butter and 1 1/4 cup sugar in large bowl. Add eggs one at a time, beating will after each addition. Sift flour, baking powder and salt into small bowl. Mix dry ingredients into butter mixture alternately with milk. Fold in berries. Divide batter among prepared cups. Sprinkle the 4 tsp. sugar over. Bake until tester inserted in centers comes out clean. About 30 minutes. Serve warm or at room temperature.
