Zesty Tuna Rice Salad

Ingredients:

  1                cup  mjb instant rice
  1                can  tuna -- drained and flaked
                        -- 6-oz. whole
     1/4           cup  celery -- chopped
     1/4           cup  cucumber -- chopped
  3        tablespoons  green pepper -- chopped
     1/2           cup  mayonnaise
  1 1/2      teaspoons  lemon juice
     1/2      teaspoon  lemon peel -- grated
     1/4      teaspoon  celery salt
     1/8      teaspoon  dill weed
  1                can  french fried onion rings -- 3-oz. whole
                        lettuce leaves
 

Preparation:

Prepare instant rice with 1 cup water and 1/4 teaspoon salt. Combine cooked rice with tuna, celery, cucumber, green pepper. Blend mayonnaise with lemon juice, lemon peel, celery salt and dill weed. Stir into rice mixture. Chill. Serve on lettuce leaves and garnish with onion rings.
