Ingredients:

   2      tablespoons   coriander seeds
   1      tablespoon    cumin seeds
     1/2  tablespoon    mustard seeds
   1      tablespoon    fenugreek seeds
   4      small         dried red chiles
   1      tablespoon    peppercorns
  10                    fresh or dried curry leaves -- optional
     1/2  tablespoon    ground ginger
   1      tablespoon    ground turmeric
 

Preparation:

1. Place all the seeds together in a sauté pan over medium heat and dry-roast, shaking pan often, until they give off an aroma, about 5 minutes. 2. Combine all ingredients in a mortar or a clean coffee grinder and grind to a powder. Store in an airtight container.
