Louisiana Epicure's Sauce

Ingredients:

  Amount  Measure       Ingredient -- Preparation Method

   2      quarts        heavy cream -- whipped
   2      cups          mayonnaise
   1      cup           tomato sauce
     1/2  cup           Dijon mustard -- (or to taste)
     1/2  cup           horseradish -- prepared
   2      tablespoons   sugar
   1      teaspoon      cayenne pepper
 

Preparation:

1. Combine all ingredients; store in refrigerator until ready to use. 2. Just before serving fish, spread 1/4 cup sauce on each fillet; pass under broiler.
