Braised Alberta Pork Tenderloin

Ingredients:

   6      ounces        lean Alberta pork tenderloin
     1/2  cup           chopped onion
     1/4  cup           chopped green onion
     1/4  cup           chopped green bell pepper
   2      tablespoons   chopped celery
   2      cloves        garlic -- minced
   1      teaspoon      minced fresh parsley
     1/4  teaspoon      thyme
     1/4  teaspoon      freshly ground black pepper
 

Preparation:

Preheat the oven to 375F. Lay the pork in a small baking pan. Combine all the vegetables and seasonings and spoon them on and around the meat in the pan. Cover Bake for 45 minutes. Slice the tenderloin and serve it with the cooking vegetables as garnish. NOTE: This is an unusually light way to use lean pork. VARIATIONS: Pork is also delicious baked with a chopped apple, an onion, and 2 cloves of garlic.
