Tofu Onion "Egg Salad"

Ingredients:

   1      package       regular tofu -- (14 ounce) rinsed
                        and well drained
   1      small         onion
   2                    green onions
   3                    celery stalks
   1      large         carrot
     1/4  teaspoon      ground black pepper
   1      teaspoon      vegit
   1      teaspoon      curry powder
   1      tablespoon    reduced-salt soy sauce or
                        bragg liquid aminos
     1/4  cup           tahini
   1      teaspoon      lemon juice
 

Preparation:

Crumble the tofu into a medium bowl. In a food processor or by hand, coarsely chop the onions, celery, and carrot, and stir the vegetables into the tofu. Stir in the remaining six ingredients, and mix well. Chill the mixture before serving.
